Abstract: El objetivo de este trabajo es aportar evidencia empírica sobre el comportamiento de los precios en una región insular, con un mercado de reducido tamaño y, a la vez, fragmentado. Para ello, con datos de precios de consumo de cuatro productos del grupo de alimentación y bebidas observados en Canarias estudiamos el precio y su rigidez, caracterizada esta última por la frecuencia, la duración y el tamaño de los cambios en los precios. El resultado al que se llega para estos cuatro productos es que la fragmentación del mercado y el tamaño del establecimiento son factores importantes para fijar el precio y no lo son tanto a la hora de explicar su cambio. En este caso, el producto es el elemento más determinante a la hora de explicar las características fundamentales del cambio de precios, no observándose rigideces ni en términos de cambios ni de establecimientos.
The purpose of this work is to find empirical evidence on the behavior of the prices in an insular region, with a market of small size and, simultaneously, fragmented. To that end, with consumer price data for four products of the food and beverage group observed in the Canary Islands we study the price and rigidity, characterized by frequency, duration and size of price changes. The main empirical result found for these four products is that market fragmentation and the type of establishment are important factors in explaining the price level and not so when one wants to explain his change. In this case, the product is the decisive element in explaining the basic features of price change, not observing rigidities either in terms of changes or establishments.
