Abstract: To determine if there is a significant difference between the north and south of Gran Canaria with respect to microbiological quality and its composition in raw goat milk and cheese made with raw milk, 8 artisanal cheese factories in the north area and 9 cheese factories in the South have been selected for this study. Cheese samples were taken, being observed in 2 cheese factories of the selected, pathogens that the law prohibits from reaching the consumer. In addition, samples of raw milk were taken and once analyzed, a statistic was made where significant data (p <0.01) were obtained in the parameters of germ colony, somatic cells and fat.
