dc.description.abstractChanna striata (8.23 +/- 0.39 g) with an average biomass of 96 fish/m3 reared in inland saline areas for 120 days, and the influence of varying salinities on the physicochemical and sensory traits were assessed. The rearing tanks (400 L capacity) were categorized into eight groups of three tanks with varying salinities: 2, 4, 6, 8, 10, 12, 14 ppt, and control (0 ppt). Increasing salinity caused a significant (p <= 0.05) decline in muscle composition and sensory characteristics of fillets and mince gel. C. striata reared in moderate salinity groundwater of inland saline produced better quality meat with higher consumer acceptability.en_US
