The harvesting and the consumption of seaweeds (marine macroalgae) has been known for centuries. There are ancient records of their use in Asian countries, nevertheless in recent years they have become popular and commercialized in Europe, as well in the American continent. Harvesting and aquaculture have increased seaweed feedstock and consequently their distribution and commercialization in global markets. Nowadays, due to their recognized beneficial biomolecules at a nutritional and nutraceutical perspective, they are being introduced as a healthy food ingredient in daily human diets. Their consumption provides essential nutrients that can contribute to reducing the nutritional deficit in areas with shortage food resources. Their cultivation can be a key-driver for a Blue and Circular economy.en_US
