dc.description.abstractEn este experimento se determinó el efecto del tipo de alimentación suministrada al ganado caprino y el tipo de cuajo utilizado en la elaboración quesera sobre el Perfil de Textura (TPA) de quesos elaborados con leche de cabra Palmera. Se obtuvieron cinco parámetros de textura: fracturabilidad, dureza, adhesividad, cohesividad y elasticidad. Se observó un escaso efecto del tipo de dieta en los parámetros referidos, siendo relativamente más importante, en los tres estados de maduración controlados, el efecto del tipo de cuajo utilizado. Los quesos elaborados con coagulante tradicional (cuajo natural de cabrito) resultaron ser más adhesivos y elásticos.en_US
dc.description.abstractThe effect of the type of diet administered to livestock and the type of rennet used in the cheese production was determined, using the Texture Profile Analysis (TPA) of cheese made with Palmera goat’s milk, obtaining five parameters for texture: fracturability, hardness, adhesiveness, cohesiveness and elasticity. The type of diet administered to the livestock has little effect on the texture parameters mentioned above. On the other hand, the effect of the type of rennet used, at the three stages of maturation tested, was obvious, where the cheeses manufactured using traditional rennet were more adhesive and elastic.en_US
