Abstract: El objetivo del presente trabajo es establecer una metodología para evaluar la calidad microbiológica de los pulpos destinados al consumo humano de la isla de Gran Canaria. Se tomaron 12 muestras de pulpos (Octopus vulgaris) de tres zonas diferentes de la isla. La primera era una muestra fresca que provenía de una zona con baja influencia antropogénica y las otras dos eran muestras congeladas, procedentes de dos áreas sometidas a una fuerte influencia antropogénica. En ambos casos se aplicó el Real Decreto 1521/1984, por el que se aprueba la reglamentación técnico sanitaria de los establecimientos y productos de la pesca y acuicultura de consumo humano. Los resultados obtenidos permiten establecer unas bases para posteriores estudios similares que ayuden a mantener la calidad actual de nuestros mares.
The aim of this study was to establish a methodology to assess the microbiological quality of the octopus for human consumption on the island of Gran Canaria. They were taken 12 samples of octopus (Octopus vulgaris) in three different areas of the island. The first was a fresh sample that came from an area with low anthropogenic influence and the other two samples were frozen samples from two areas under strong anthropogenic influence. In both cases it was applied the Royal Decree 1521/1984,which established the technical health regulations approved for the establishments, aquaculture and fishery products for human consumption.. The results we obtained allow to establish a basis for further similar studies that would help to maintain the current quality of our seas.
